  • tried and tested diabetic cake recipes please

    Well hubby has kindly volunteered me as baker for next month for a Macmillan coffee morning. There are a couple of people he knows who are diabetic and it would be nice to do something to include them but have no idea on nice/ suitable recipes. Please help, I am sure some of you will have some wonderful ideas.

    Well my Mum is a diabetic and she would prefer a smaller portion of a fabulous cake than a larger piece that doesn't taste so good - so bear that in mind. That said to reduce the carb content in cakes I will often use half flour/to half ground almond in any recipe. The mix looks grainy but the cakes usually comes out fine. Also you can use the half spoon sugar using half the suggested amount of sugar in the recipe. This also works out well.

    Try to make a plainer style cake - lemon drizzle, teacake, maybe beetroot or courgette? I've got a lovely bara brith recipe Leave out the sugar icing fillings and toppings.

      I know several diabetics, they all avoid specific diabetic cakes, sweets etc like the plague as they claim they're rubbish. As with Scarlet's mum, they prefer smaller helping of normal cake. Lovely idea though.

      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

      Which one are you and is it how you want to be?

        I was wondering about fruit loaf type of thing - bara brith as Scarlet suggested but also my OH makes amazing bread and just adds things like dates and walnuts, figs, apricots, hazelnuts, spices. Chocolate bread is also great. (he does an outstanding olive and basil and sun dried tomatoes and oregano or similar combination - I don't know if you could do a type of scone with cottage cheese and fresh fruit - I don't know if that is diabetic friendly but even as I type I'm thinking I should try it myself!)

        I have fond The Kitchn a really useful site when researching lactose free - gives me enough info to vary existing recipes.

        I'm sure you know what you are doing but at school when people try to make "suitable for" recipes we are not allowed to say anthing is for eg gluten/nut free so now we put up the exact list of ingredients and people (or parents decide). Hope it goes well.

          I would make a carrot cake with a bit of 'lemon juice & cinnamon' which are super foods for diabetics,dried fruit has quite a high sugar content,walnuts & almonds are lovely in a cake. I use brown sugar but you don't need as much as they say in recipes,I'd go for 50% reduction,but you can taste the mix before you bake it to check?
