After having this for the first time this year I thought I'd share it. I don't know the name but it is very simple and absolutely amazing. Everyone who tries it wants the recipe.
Ingredients: Ripe tomatoes
Pesto
Mozzarella cheese
Olive oil
Put a layer of sliced tomato in a shallow ovenproof dish. Spread a few spoonfuls of pesto (to taste) on top. Slice or tear some (lots) mozzarella on top. Drizzle with olive oil. Put into the oven. (Gas 5 or 6 for 40 mins) until brown on top. Or longer in slower oven ....oven temp doesn't really matter, fit it round other things
You end up with soft tomato underneath, crusty cheese on top and the most amazing sauce-needs lots of crusty bread (or garlic bread) for me!
Its great as a side dish, as a starter or for lunch as a larger portion.
