  • My best tomato recipe.

    After having this for the first time this year I thought I'd share it. I don't know the name but it is very simple and absolutely amazing. Everyone who tries it wants the recipe.

    Ingredients: Ripe tomatoes
    Pesto
    Mozzarella cheese
    Olive oil

    Put a layer of sliced tomato in a shallow ovenproof dish. Spread a few spoonfuls of pesto (to taste) on top. Slice or tear some (lots) mozzarella on top. Drizzle with olive oil. Put into the oven. (Gas 5 or 6 for 40 mins) until brown on top. Or longer in slower oven ....oven temp doesn't really matter, fit it round other things

    You end up with soft tomato underneath, crusty cheese on top and the most amazing sauce-needs lots of crusty bread (or garlic bread) for me!

    Its great as a side dish, as a starter or for lunch as a larger portion.

      Sounds amazing - just got to wait for the tommies to ripen now ... Sigh

        Just about anything with tomato and cheese gets my vote. This sounds delicious. I might try this as a side with macaroni cheese.
        LOVE growing food to eat in my little town back garden. Winter update: currently growing overwintering onions, carrots, lettuce, chard, salad leaves, kale, cabbage, radish, beetroot, garlic, broccoli raab, some herbs.

            I've been making this which is quite similar;
            Ingredients - puff pastry (I buy the ready rolled sheet)
            Cherry tomatoes
            Basil
            Mozzarrella
            Garlic
            Olive oil
            Egg (to brush on the pastry)
            Fan oven temp; 190 degrees
            Make a square or rectangle with the puff pastry & fold the edges over by 1 cm,so it looks like a nice picture frame.
            Brush with egg & stab it with a fork,then bake for 5 minutes,take out,stab again or it rises,after about 5 more mins when its browned a little,take it out the oven.
            Put thin slices of mozzarella within the square,then layer with halved tomatoes.
            Blitz 1 or 2 garlic cloves with basil & about 1 or 2 tablespoons of olive oil in a blender (or pestle & mortar) & sprinkle all over the tomatoes.
            Bake for about 10 or 15 minutes (until golden brown).

              I know there was a reason why I hadn't read this thread! Now I'm hungry, thanks a lot
              And I haven't got any tomatoes

                Crumble. Peel and quarter toms. Cover with crumble mix (equal parts butter, flour and parmesan) bake 30 mins;
