We often eat veggi several times a week especially when we have a glut. Tonight Turkish carrots with lentils, really yummy!
Hear 4tbl spoons oil
Sauté a large onion until golden
Add 4 cloves garlic chopped,1.5tspns coriander seeds crushed,.25 - .5 tsp not chilli flakes. Cook for 2mins.
Add 100g small green lentils,6 large carrots sliced, 2tblsp tomato purée,2tspns caster sugar,salt and pepper, 275ml vegetable stock or water.
Bring to the boil and cook until carrots and lentils are tender, about three quarters of an hour or so, adding more liquid if necessary.
Add 2tblsp chopped mint, parsley or dill a good squeeze of lemon juice and a glut of olive oil.
Serve with rice

Here is a list of some wines you will be able to drink- but leaving booze out altogether will make a heck of a difference to how you will feel on a vegetarian diet!!
There's veggie and there's really veggie. Personally I wouldn't bother with the wine issue.
My man is veggie, his son vegan and I'm the strange one who eats meat sometimes. I normally eat vegan/veggie even though I'm a meat eater.
What we've been eating recently:
Italian ratouille (like the French kind but done quickly in a pan)
Hummus (made in our nutri bullet to my special easy recipe)
Lots of home made minestrone
Mushrooms, spinach/any greens, walnuts
Veggie lasagne (no meat, add more veg and beans if you like)
Pizza
Washing up is a lot easier when you don't include meat.

I thought all wine was the same. I didn't know you could get wine for veggies. Shows how much I know!
I've seen a few meals that look and sound nice. Can't wait give it a try
Cashew and parsnip roast. I will post the recipe when I can find it. Serve it with all the usual Christmas trimmings and don't let any non vegetarians near it or there will be none left for you!!

Christmas is easy. I do a roast dinner. My OH gets goats cheese which is the spawn of satan and I get capon. The rest is the same, even for the vegan.
For mince pies, I make a meat eaters batch (pastry with lard), a veggie batch (home made mince meat with butter) and a vegan batch (bought mince meat -did you know that most basic mincemeat is vegan) because when I made the mincemeat I didn't have the space to keep a bit aside to make with coconut oil rather than butter (my kitchen is 7ft by 4ft).
This may seem like too much work. In fact, it's partly so I get to eat MY mince pies as the OH and his son the vegan won't eat mine.
Did you know that basic cheap Bisto (or Te$co value gravy granules) are vegan?
Pringles texas BBQ are also vegan. Start looking at labels and you'd be amazed what is veggie. Some yoghurts aren't for example as they use cochineal which is ground up beetle.
We only eat meat once or sometimes twice a week, so we have:
Spanish omelette - layers of cooked potato, onions, veggies in heavy pan, add eggs and cook until set (finish under the grill)
Ratatouille with spaghetti or rice or bread
Pizza
Lentil moussaka/lasagne
So many curry dishes - tonight sour tomatillo/green tomato curry, dal, rice, beetroot curry
Sort of huevos rancheros - crush cooked kidney or other beans with fried onions and spices and layer in dish, add a layer of tomato sauce then make a numbeer of hollows and drop in a raw egg, finish in the oven. Serve with bread.
Risottos - one or a mixture of leek, broad beans, fresh herbs, florence fennel, courgette and lemon, roast pumpkin
Soups - miso makes a good flavoursome veggie stock.
Veggie chilli
Stir fries
Lentil/chick pea/bean burgers
Courgette fritters
Leek and blue cheese pie
Chard, cheese and potato tart
Caramelized onion tart.
