Unusual recipe ideas for Quince?

I don't know whether that's unusual but I made some "Christmas flavoured Apple and Quince sauce" a couple of years ago which I thought was quite nice. Basically an apple sauce with some quince (peeled, cored and cut into small pieces, then cooked with the apples) and an addition of clove, cinamom etc. spice.

I think that sounds very nice. I love cinnamon whether it's Xmas or not!

I make the obvious quince jelly though last year I made a lamb tagine with quince that was very good. I can't remember what recipe it was but this one looks worth a shot. Easy dinner for friends
