I'm going to a friends surprise birthday next Saturday. As usual it's bring a dish (or two) we always have great fun with plenty of food to go around. I'm usually volunteered to make puddings but I'm doing some mains this time. Its a curry night, now living in Manchester near curry mile for several years I was well known in some of the curry houses they loved my welsh accent! Though that was a long time ago and my OH is not keen on spice so I haven't got any recipes to do other than sag aloo which I can eat on it own.

Any of you willing to share some of your tried and tested recipes? I would prefer a rogan josh style curry as ive loads of tomatoes in the freezer to use but willing to try anything really!

If I want to do a quick one I simply fry up a load of chopped onions, chillies, garlic and grated ginger. Add loads of curry paste (I make up a few jars of it every few months but bought us fine). Add meat and veggies then tomatoes and coconut milk and usually rehydrated fried beans. Simmer gently for a bit and eat. It's obviously a true curry but is lovely and can be adapted to what you have in.

Curryish...3 each of cardamom pods, cloves and 4 peppercorns. 4 cloves garlic chopped finely, 1 chilli chopped finely. 500g Greek yoghurt to which you add ½ tsp ground pepper, 3/4 tsp chilli powder and 1 tsp cumin. Mix together set aside. 500g chicken breast, Turmeric, Salt, Garam Masala, butter fresh coriander. Place 5 tablespoons oil in wok (you can use a pan), add cardamoms, cloves and peppercorns. When they sizzle add garlic and chilli, fry 30 seconds. Add chopped chicken breast, 1 tsp turmeric and 1½ tsp. salt. Cook for 15 mins highish heat. Add yoghurt mix cook for further 15 mins slightly lower heat. After that 15 mins add 1 tsp. garam masala and large knob butter and handful of coriander. Cook for further minute. Garnish with coriander.

I'd have to more or less go with the same as Alison. Start off with onion, garlic, ginger and chilli as your curry base then add your spices. I used to grind all of mine but then accepted that Patak's do at least as good a job, if not better than me, so now I just just buy curry paste. Add the tomatoes (no coconut milk in Curries for me - yuk..) then pretty much whatever you want. I like a sweet curry so usually add a chopped banana, some dried fruit and a dollop of mango chutney.

Can't help with a recipe as OH is the curry King chez nous!....but I always enjoy having a choice of mains so there are different combinations of flavours and textures on the plate.

Often a veggie one with chickpeas.........creamy, sweeter chicken one.......and then a tomato meaty one which punches the blow spice wise.

A simple dry cauliflower curry is lovely side dish, as is bananas sautéed and caramelised in butter.

Good idea Nicos, I think I'll make a veggie one too. Perhaps a dal. When I went to India a couple of years ago I stayed in an area where they didn't allow alcohol and meat. The currys were delicious, my favourite was made with cashews, throughly enjoyed them though eating spicy food for breakfast was horrible. I had to stick to coffee! I think I may be buying a jar...I had visions of myself grinding some spices up in my coffee grinder and slow cooking a lamb shoulder in the aga

I start off with onions and garlic then adding loads of roughly chopped tomatoes with chilli. I always add garam masala spices as it smells so wonderful, then what ever else i can find normally curry powders, cardamons etc and normally do veggie curry but the odd prawn curry is lovely. I love using coconut milk. Handfuls of chopped coriander at the end is great.

What about a potato dish like bombay potatoes but this is more like a side dish.

I use much the same as Alison, but no coconut milk.
I put loads of chopped mushrooms in mine as we both love them.

hi scarlet ,i have just started cooking currys myself ,i went on you tube and found "al`s kitchin" he has worked in indian resterants and explains things well ,the 2 i have tried so far are the chicken jalfrazi (which was lovely but not great if your oh doesnt like the heat ) and the tandori chicken which had a nice minty garlicy taste too it plius if your going to a party you could make it the day before and take it with you to cook on the night ,check him out and see what you think ,cheers

Thank you SP, I may need it! I've got 3 curries to take son no2 has decided he loves curries and can't wait to get stuck in. He's tasted along the way.
I've made a beef rogan josh. I know it's usually lamb but my local butcher had a good lump of brisket going cheaply. I cooked it long and slow in the Aga yesterday with loads of home grown toms, onions, garlic, ginger, cumin seeds and spices.
I've got a cauliflower curry, along the lines of Alisons/SVwith onions, garlic, ginger and a paste made of a bag of spices my brother dropped off last week after his travels to India.
I've also got a creamy version of chicken and cashew nut curry with some coconut cream and spices (again from my brother).
My house stinks, I stink but I'm really looking forward to this. I'm gonna make some Moscow mules too! I think this is gonna be a fun party!

Easy Chicken Tikka Recipe.

In a bowl add.

1 heaped teaspoon crushed garlic.
1 teaspoon crushed ginger.
1/4 teaspoon turmeric powder.
1/2 teaspoon chilli powder.
1/2 cup of Greek natural yougurt.
1-2 lemon's squeezed.

Add strips of chicken fillets and marinate for 2 hours for best results.

Grill on the highest heat in the oven, after turning spoon marinade over other side and finish cooking.
