I thought her take on pickled beetroot looked canny, so I'm going to prepare it this evening! Delia prefers red wine vinegar and thinks malt vinegar a bit too strong..........I think I agree with her, so I'll give it a try!

Seems quite nice, but I've just had a couple of fork fulls and I reckon it will take a week or so to infuse? A bit more delicate with red wine vinegar rather than malt vinegar and the addition of shallots makes it a bit more interesting. (Crikey, i sound like one of those pompous wine critics!)

I used either white wine or cider vinegar (cant remember which) for mine - malt vinegar is far too strong and doesnt look as pretty in the jar!
