Hi I'm new to this forum world but i love to cook and eat lol and now the world of growing your own yey I always hated Minestrone because i'd only had instant or from a can and it wasn't great and then i found a recipe and loved all the ingredients so i had to make it. It's a wondersoup , i just decided lol, because it's a great base to make so many variations depending on what you have. It might not be a true Minestrone but it's so good who cares. I'm not great on measurments as i just go by sight so this would serve 3-4 people i would say,,,sorry if my portions are off lol
Ingredients
Oil
2 rashers of smoked bacon, cut into small strips ---- more if you like
3 cloves of garlic, crushed ---- more or less if you like
1 large carrot
1 parsnip (same amount as carrot) ---- all cut into small cubes
1 turnip (same amount)
These can be any variation of root veg,,not sure potatoes would work although i bet sweet ones do.
1 can of chopped tomatoes ---- with or without herbs---or make an alternative
1 pint of chicken stock
Large bag or however much you want of Kale or any dark leafy green ---- shredded
Croutons, black pepper, parsley, cheese --- all optional to serve.
Use pasta, butter beans or whatever you like to 'fill it out'
METHOD
Heat a glug of oil in a heavy base pan (big enough for a load of soup) I use a large high sided frying pan,,,medium to low heat,,,gently fry the garlic and smoked bacon,,this will create the base flavour,,,fry for a couple of minutes but don't brown too much if at all.
Add the root veg and fry on a medium to high heat for a further minute or two.
Add the tomatoes and chicken stock.
Bring to the boil and then gently simmer (bubbles coming up but not breaking the surface or just breaking it) for around 15 minutes,,until veg is practically cooked.
Add the Kale/Cabbage cook for a minute just to soften.
Serve with croutons parsley black pepper and a little cheese if you like.
I don't usually add pasta but it fills the soup out a lot, butter beans are also great in it. I make a completely different one each time lol depending on what veg i have in, sometimes i add tomato puree or cayenne pepper sauce other times loads of garlic, i don't think quantities matter so much with this just taste taste taste as you go along.
I think most herbs would go great in this but remember to only season right at the end because cooking will alter the flavour.
I would love to make a vegetarian version but have failed miserably,,absolutely bland as anything,,,any suggestions on how to get those layers of flavour without the smoked bacon and chicken stock?
