If anyone else is trying to figure out ways of using up spring greens, this recipe really is delicious. Works with any sort of greens and you can leave out the bacon or use veggie bacon if you are a non meat eater. I can't stand goats' cheese so have made it once with ordinary cream cheese and once with a blue ewes' milk cheese. Both delish!
