  • Apple Charlotte recipe, using digestive biscuits?

    Hi Gang,

    Just a quickie question for you all! My Mum used to make what we all called an 'Apple Charlotte' back in the 80's, (which was layers of stewed apple with ground up layers of Mc V's digestive biscuits, topped with some stiff cream) which was absolutely divine to eat!

    Just wondering if anyone else can remember such a pudding, and if so if they have a recipe? I'm certain of the biscuits, but cant remember exactly how it was made, so if anyone can offer any advice I'd love to hear from you, as I've promised Mr D I'll make him one at the weekend!

    Oh dear Mrs D.....I recall apple charlotte as a layer of apple topped off with Victoria sponge.
    Sounds like yours was the 'de-luxe' version!!!

    I do hope it was served with Birds custard???

      Hmmm I know I've got a couple of years on you, Mrs D, but I remember apple charlotte being sliced apple layered with breadcrumbs....

      I wasn't that keen - but using digestives rather than breadcrumbs? Now you're talking!

        i have a recipee somwhere, ... its in a box! it may take some years to find it. its very nice tho, i like it with rhubarb

              ...looks like it's something my mother didn't make- but they too are all with bread Mrs D!
              If you find the recipe I'd be interested to give it a go- I'll probably have a go at one of these too! Sounds lovely!!

                    Hmmm, I remember apple charlotte with breadcrumbs now - I'd forgotten all about it! Wonder if mother in law's apples are ready yet .... !!

                        Thanks for the replies everyone! I'm going to ring my Mum (who now lives in Corfu) and see if she can remember the recipe, and have a go at making it tomorrow! Will post the results and recipe if its a scuccess tomorrow!

                            Mum used to do something she called Apple Charlotte, not quite sure how it was made (wasn't one of my fave puds) but it did involve breadcrumbs and brown sugar sprinkled on top before it was cooked - think she thought it was a bit posh as it had the brown sugar!

                            Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                              Well, Mum wasnt in yesterday (she was probably enjoying the sunny weather in Corfu!), so I had a go at making the recipe anyhows, results voted by Mr D and Miss D as fab!

                              Basically there's 2 parts to the recipe, a pan of stewed apples (however you like to do them) and the biscuit base for the intermediate layers, made with about 2/3rds of a large pack of digestive biscuits, bashed into crumbs and then bound together in a pan with some melted cooking marg and some sugar, then let them both go cold!

                              Putting it all together, choose a nice glass bowl / serving dish about 3 or 4 " deep, and lay a layer of the stewed apples in the bottom about 1/2" thick, followed by a layer of the biscuit mix the same depth, repeat this until you've either used all the ingredients or are 1/2" from the top of the dish / bowl, then top with whipped cream and put in the fridge for at least an hour to chill! Very simple to make, very scrummy too!
