Apple Charlotte recipe, using digestive biscuits?

    Basically there's 2 parts to the recipe, a pan of stewed apples (however you like to do them) and the biscuit base for the intermediate layers, made with about 2/3rds of a large pack of digestive biscuits, bashed into crumbs and then bound together in a pan with some melted cooking marg and some sugar, then let them both go cold!

    Putting it all together, choose a nice glass bowl / serving dish about 3 or 4 " deep, and lay a layer of the stewed apples in the bottom about 1/2" thick, followed by a layer of the biscuit mix the same depth, repeat this until you've either used all the ingredients or are 1/2" from the top of the dish / bowl, then top with whipped cream and put in the fridge for at least an hour to chill! Very simple to make, very scrummy too!

    Will give this a go tonight, sounds lovely.

        Dear Mrs Dobby,

        My name is Sue Jaeger. Regarding your Apple Charlotte made with Digestive Biscuits. I used to make this when I was at School thats going back to 1968.

        You crash the digestive biscuits with a rolling pin and mix with melted butter, you then stew your apples with a bit of cinnamon and sultanas and you layer them, biscuit base, then apple and so on, then add very thick cream on top.

        Hope this helps you to remember.

          It's also very tasty if you make it with ground hazlenuts instead of the biscuits.
          Ginger biscuits would be nice though....

            OOh - I think I know what I'm doing next weekend with the cooking apples the toddler demanded last weekend in the shops (I was going to do plain stewed with custard but this sounds much better!!).

            Thanks Sue, cos I missed it last summer, and the hazelnuts sounds like a fab variation.
