  • Quince overload

    I have a quince tree at the lottie. It has been producing a good number for some years now and I usually make some quince jelly and infused vodka as well as using them in sweet chutneys and bottling some apple and quince sauce. I've done this already and still have loads left. They'll keep for a while yet and smell divine but any ideas would be welcomed (especially ones that don't involve freezer space which is already bursting!). We don't really eat puddings mainly so ideas for savoury dishes in particular would go down well. Am thinking of trying the quince and cheese pizza idea in the HFW Fruit book but more ideas would be very welcome.

    Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

    Which one are you and is it how you want to be?

    Membrillo? I know it's similar to jelly but unless you are going to use your freezer it needs to be a preserve of somekind. Though would be something a little different in some Xmas hampers. Or maybe fruit leathers?

      Hmmmm, fruit leathers, might well do that. Not put any of those in my Christmas hampers for a while. Thanks.

        Quince infused brandy is lovely, on its own or with other spices. Likewise spiced quince jelly (with ginger, cloves & star anise or with rose and a little vanilla). And there's tart tatin, or poached quinces...

          I've only had quince once and that was a home made quince brandy lacquer. It was lovely. But may not be different enough to the vodka you already make.

            I have to get quinces from Turkish shop. Wish I'd planted quince instead of medlar.

              Wow, some great ideas there. Thanks - will have a proper look later and plan some meals. Didn't know they were used so much in Greek cooking!

                Use them in tagines.
                I know you said you don't do puddings but apple and quince crumble is delicious as is apple and quince pie with butter and walnut pastry.

                I would also go with the membrillo to go with cheese.

                  I had a delicious salad at Heligan last week that included poached quince slices. I think other ingredients were pecans, chicory, pickled celery, blue cheese cubes and some greens.
