DIY roast pumpkin seeds?

I keep planning on doing this , then chicken out cos I'm not quite sure what to do!

thing is....

what sort of 'pumpkin' is usually used?
Some varieties have enormous seeds with tough outer coats....

any tips/advice would be very much appreciated!

I did it with turks turban seeds but over cooked them! Crunchy, quite nice, with an interesting 'charred' flavour

Do you have to take the outer shell off prior to roasting?

Am sure i have seen such chat on here before about such things,a good wash and gentle dryout roast ????and any squash seeds????

I'll watch this thread with interest. I've cooked seeds from various squash some tasting better than others, Turks Turban as I remember was one of the better ones. All I did, however, was wash the seed, pat it dry and throw it into the wok with a splash of oil and some sea salt. They made a tasty snack but it was a bit like eating cooked horse fodder. Be a lot better without the husks.

Do they not pop out of their husks when eaten? Here the locals love pipas, sunflower seeds, which they buy still in the seed case. They're very popular with the old boys. They pop them between their teeth to release the seed. Probably good in that it slows down consumption, but not great watching people spit out the husks or coming across piles of husks by benches.

I saw something somewhere about a pumpkin that you don't need to remove the shells - I'm sure it was Kakai but I could be wrong.

There was definitely a thread on here recently about pumpkin seeds too - VC will find it!

these types of pumpkins are grown for their seeds rather than fine flavoured flesh.
I often buy pumpkin seeds to soak in brine for 24 hours prior to roasting in the oven - delicious.

If I try seeds straight from the pumpkin when it's picked, will the seed coating be less tough for roasting?
I'm thinking- does the seed cure in the same way as the skin when it's in storage?

you can try them - it is worth a go. I have a feeling that what will be left inside the seeds is not going to be a nice plump pumpkin seed i.e. not worth the effort. I really think the key is to get the right sort of pumpkin in the first place for what you want to achieve
