On the wild (garlic) side!

Having picked over a kilo of wild garlic I've just made a delicious soup and some pretty strong pesto. Anyone make anything else they make with wild garlic as I have ano unlimited supply at a friends garden.

Have some vague recollection of pickled seed heads.....

Made another of his wild garlic pestos tonight - almost blew my head off and I love garlic!

I would love to have cooked with it but unfortunately I only have 2 leaves showing at the moment - it may take a little while till I get to have a harvest.

Of course when that happens I'll not be able to keep up with it. Just hoping that my ploy of planting it behind a screen or comfrey/rhubarb/udo helps to control the spread ( and, with the shade from the summer sun, possibly extend the season)

No qualms about it spreading outside the fence though, as it is a native and that side is nettles, ground elder and other vigorous plants -let them go head to head.

But that's in the future - right now I only have 2 leaves. Actually 1 and a half and I had to crush half a leaf to check.

P.S. Where are the recipies - it's no good saying it was lovely if we don't have the recipe

Soup - recipe said 4 people but it was 2 (maybe we're greedy )

1 medium onion, approx 200g potato, 200g wild garlic, 1 litre veg stock (I used half strength Swiss veg bouillon) , salt to taste.

Melt butter, cook chopped onion and potato till onion softened. Add stock and simmer till potatoes soft. Add garlic for a couple of minutes till soft. Blend and season - yum. Can stir in cream/yoghurt etc if you want.

Making a stash for the freezer tonight.

I have 4 small clumps I took from a friend's garden in Devon 2 years ago, harvesting my first leaves this year. Nom nom nom!

HH it also tastes good in omelettes, or added to stir-fries.

Don't think I can get half the ingredients in Pembrokeshire! Some interesting recipes on the website though.

I occasionally have a few fresh flowers with a sandwich when sat on the river bank when fishing, I find the leaves a bit on the bitter side raw.
