  • Sweet peppers

    Anyone got any good ideas for things to do with roasted peppers. I roast mine in oven for half an hour with oil and garlic, cool them, remove skins and cover in oil in fridge. I love eating them as are or as a topping on pizzas but some other ways of using them would be much appreciated please.

    If you roast sweet peppers, tomatoes, garlic and a few chillies together in an oven tray (drizzled with olive oil), you can blend the veg to make a wicked sauce or salsa. (Can be frozen)

    You can also stuff your peppers with rice, mushrooms or any mixture of your choice before roasting them - makes a good meal, but obviously won't keep

      Hummus with roasted peppers is amazing or I've seen a roasted red pepper pesto before now, takes out the basil and replaces it with roasted red peppers.

        May not be quite what you're looing for, but:

        Seedy Veg
        Per person - half a pepper and half a medium leek. Cut leek in rings and pepper in bite-size pieces. Put in oven-proof, lidded dish. Chuck on some seeds - whatever comes to hand (no, come on - edible ones only). Drizzle some strong-flavoured vegetable oil - toasted sesame is very nice - and cook in medium oven (Gas Mark 6/200C/400F) till cooked. I always get orange peppers, as I can't digest red or green ones very well, and this makes a lovely, colourful dish.

          May not be quite what you're looking for, but:

Sprinkle on some seeds - whatever comes to hand - no, come on, edible ones only. Drizzle some strong-flavoured vegetable oil (try toasted sesame). Cook in medium oven (Gas 6/200C/400F) till cooked. I only buy orange peppers, and sometimes yellow, because I can't digest red or green ones very well. This makes a lovely colourful dish.
