  • Summer Squash - Yellow Bird

    Hi

    I've got some yellow bird squashes growing on my allotment, two plants with several squashes already.

    I'm going to let them get a little bit bigger, but then can anyone recommend how I cook them? I've never really cooked with squashes before... they look fab though!

    If they're small, stab them with a knife a couple of times and microwave - about 4 mins. Then you can cut them in half and scrape away the flesh - lovely - I like it mashed with butter, pepper and maybe a little nutmeg. Or you can peel and cut up - a bit harder work this, and use in soup or curry. Curried squash is really nice. Great texture.

      Are these a type of winter squash? If so, my favourite way of having them is cut in half, scrape out the seeds and put in a knob of butter with a bit of garlic. Roast in the oven and then spoon out the softened flesh and mix with crumbled cheese, bits of bacon, mushrooms, walnuts or whatever, pack it all back in the skins and back in the oven for a bit so the cheese melts and then eat. Really lovely and dead easy. If they're a summer squash then ignore this advice!

        They're summer squash, but thanks anyway!!

        Microwaving sounds nice and easy... looking forward to trying them now.

          Should have realised they were summer squash by reading your thread title, serves me right for being unobservant!!!!! I usually use the summer ones in various stir fries and pasta dishes. Quite like courgettes simply fried in butter also so this could be nice for your squashes.
