Recipe for using up bolted leeks

My leeks have bolted in the last week. I've dug them up and was wondering if anyone had any recipe ideas for them?

I assume you remove the woody stem and cook the rest...?

I've used bolted leeks before. Like you said take out the central woody bit and eat the rest.
If you've got lots, maybe a big batch of leek & potato soup, and freeze a few portions.
Only other thing I do with leeks is cook them in a cream, whole grain mustard sauce. But that doesn't keep.

Take out the woody core chop and freeze.

same here,slice down the centre longways,take out the centre hard core,use as you wish,

Wot, you mean the bit you chuck away! Garlic scapes are nice but I must confess to never eating a leek scape.

It can be done,Leek Scapes but still not sure I fancy them!
