I need to make two soups for Christmas and have been told not too heavy, so was going to make leek and potato, and a parsnip soup, the question I would like answered is what should I use, chicken or vegetable stock for the soups

I make my leek and potato with reconstituted powdered milk, and just season with salt and pepper.
Sauteing the leeks slowly in butter, always helps as well.Last edited by Thelma Sanders; 21-12-2017, 10:33 PM.

Thanks NS I have both chicken and veg stock but someone told me chicken stock was better for leek and potato soup and was wondering if others thought the same.
Thelma, is reconstituted powdered milk different from powdered milk?it may be a struggle to reach the top, but once your over the hill your problems start.

More serious note, do you make up the milk first then boil the veg in it, or add the powder after the soup is made?it may be a struggle to reach the top, but once your over the hill your problems start.

I saute the shredded leeks in butter til very soft, add small cubes of potato and just a little water lid on to steam. When spuds are soft I top up with the milk to make it as thin/thick as you like, and reheat it all. You can always whizz it a bit if you like a few less lumps in it. S&P to taste..
