My recipe for sour dough, in a Moroccan cook book, also takes a good weekend to do properly. According to the recipe, you need organic red grapes and you can then make your own yeast starter. I have a different recipe for French couronne which is a bit of a cheat's way forward though, it uses yoghurt to get somthing like an authentic sour taste and is extremely tasty. I can fish it out if you like.

SOURDOUGH BREADS
The Bread Book by Linda Collister and Anthony Blake (ISBN 1-85029-532-8) and Bread (from ciabatta to rye) also by Linda Collister ISBN 1-84172-194-8) contain several sourdough recipes. You could look in your local library to see if they have either of them. If not, if you would like, I can type them out and PM them to you.
