    I had problems getting into the Vine this morning.....anyone else?

    More DIY again today

    Diet going well -have managed to cope with dropping the calories after the festive binge!
    Well done Thelma...every bit counts
    Nice looking cheesecake Captn
    Next weigh in Monday....but it's looking good.

    • Afternoon all,what a lovely day,spent some time in the poly yesterday,got good start on clearing out,got fairy here so no can do just now,the girls are let in the net cage to do what ever,onions and first early spud seeds are in the wings,the bother is,this weather can turn very nasty anytime,must look through seeds to see what can be done,or placed in the wings,have a good afternoon all,and Bgood2yrselves

        Thanks.. I ruined it a bit, the OH wouldnt let me use a knife on her tin..and I didnt use paper to line the bottom.. very hard to cut cheesecake with a silicone spatula..

        • There's no way that i can catch up with about 4 weeks posts, so I'll start from now. I hope everyone has had a good Christmas and New Year. I've had a fantastic time and the best is that my older 2 are talking to each other and my youngest is talking to me.

          Last year was a bit of a no year grow wise but this year is a new start.

          I will do a bit of catching up before I post again.

                        Ingredients
                        Crust
                        300 ml (150 g) almond flour
                        50 g butter
                        2 tbsp (25 g) erythritol
                        ½ tsp vanilla extract

                        600 g cream cheese
                        125 ml heavy whipping cream or crème fraîche
                        2 eggs
                        1 egg yolk
                        1 tbsp (10 g) erythritol (optional)
                        1 tsp lemon, zest
                        ½ tsp vanilla extract
                        50 g fresh blueberries (optional)

                        Instructions

                        Preheat the oven to 350°F (175°C). Butter a 9-inch (22 cm) springform and line the base with parchment paper.

                        Melt the butter for the crust and heat until it gets a nutty scent. This will give the crust a lovely toffee flavor.

                        Remove from heat and add almond flour, sweetener and vanilla. Combine into a dough and press into the base of the springform pan.

                        Bake for 8 minutes, until the crust turns lightly golden. Set aside and allow to cool while you prepare the filling.

                        Mix together cream cheese, heavy cream, eggs, lemon zest, vanilla and sweetener, if you’re using any. Combine well.

                        Pour the mixture over the crust.

                        Raise the heat to 400°F (200°C) and bake for 15 minutes.

                        Lower the heat to 230°F (110°C) and bake for another 45-60 minutes.

                        Turn off the heat and let cool in the oven. Remove when it has cooled completely and place it in the fridge to rest overnight.

                            • Morning all. All this talk of cheesecake has got my tummy rumbling...

                              Blue skies today. But perishing cold. Always nice to see the sun though.

                              Mr Snoop off out today with a long shopping list. I'm holding the fort and trying to get ahead with some work. If I really make some progress, I shall get out in the garden for an hour or so.
