Cooking help needed!!

I have a problem, we have guests coming to stay this weekend, and I asked my friend a few weeks ago did anyone have any no-no's food wise, and he said no we're all fine.

I spoke with him last night to confirm they were still coming down, and found out the oldest of their two boys is the fussiest eater known to mankind!

He likes, pasta, rice, green veg, carrots, fish, but no meat, no tomaotes sauces, or cream sauces. the younger one eats most things you put in front of him, and especially likes cooked dinners. So help please, what can I make that I can feed everyone with, without them feeling poorly done by!

I had been intending to make Welsh dinner as we call it, Ham and parsley sauce, with the option of cod for oldest boy, with lemon and herb stuffing balls, rather than a crust just incase he doesn't do that.

I have plenty of home made carrot and coriander soup, which has been sieved to remove the green bits (dd doesn't like these!), for lunch with some homemade bread, but do you have any ideas for a pasta dish either with tinned salmon or tuna, that doesn't constitute a fish pie which he doesn't like!!

cor your good, they would get what they are served and lump it, cor i hate fussy kids! do just as you say and grill some cod with the same veg as everyone else, otherwise let him go hungry lol!!

my kids can be fussy at home, but i we go anywhere they eat what they are given.

how about a fish and rice, easy peasy, i feel sorry for you this weekend

I love cooking which, is why I am asking, I would hate to have one of them not enjoy it. I was also thinking of a paella maybe, but I would pick up the fish for that on the day anyway.

I've plans to make some welsh cakes tonight, if time allows, and I know OH will make some truffles and pics' (mini sponges on top of jam tart bases).

I guess I'm a bit nervous as the two boys are my friends new partners children, which I haven't met yet, and I always like to have a warm welcome for guests.

LadyWayne makes a gorgeous chicken pesto pasta.

Simply boil some pasta and steam some sugarsnap peas (or similar), At the same time cut up some chicken and fry in a pan with a little olive oil.

Drain the pasta, add in the chicken, sugarsnaps (and whatever other veg you like) and stir in some good pesto. Serve with plenty of grated parnesan.

Or

Pesto crusted salmon.

Mix up some pesto and freshly grated breadcrumbs - spread over the salmon fillets/steaks and heat in the oven - 160 - 15-20 mins I think (depends how pink you like your salmon, and how cusrty your crust..).

Serve with new potatoes and choice of veg.

Cheers dude, I was thinking of a pasta dish which was clean and oil based, perhaps a cod pesto pasta, might do the trick. I have all those ingredients, I'll ask him while he's here to try a dab of pesto to see if he likes it.

One of my kids used to be a fussy eater, until I told him to eat what's in front of him or go hungry.
Sorry, I have no patience with fussy eaters. I'll deal with Vegi, Muslim, Jewish, Coeliac, Non-Dairy diets, but people who are picky and fussy..tough in my house!

Yeah, its easy to say with your own children, and DD eats whatever we have, but when you have guests its a different story. I'm not mean enough to tell them tough, they are kids after all, and its not their home.

Tuna pasta bake is an easy one - and very tasty. Cook your pasta - shells spirals, whatever) - quantities according to packet per person. Make yourself a favourite sauce usuing a vegetable stock, thickened with a bit of cornflour and include loads of roasted veg - add all the things he likes. Then mix in the contents of 2 tins of tuna. Stir in the pasta, grate cheese on top, bung in the oven for 10 mins or so and Bob's your Uncle (and Flummie's your Aunt!)

If he likes prawns you could always try prawn. pasta & avocado salad (unless the avocado counts as 'green' & he wouldn't like that!).Just cook the pasta shapes & rinse in cold water until cool, mix with prawns & chopped up avocado drizzled with lemon juice then add a dressing of olive oil & vinegar & add a few dollops of mayo if he likes that, serve with crusty bread. It would work with salmon & cucumber (again 'green'!) or tuna & sweetcorn as well.

When I was a kid there were things I didn't like, but I ate them if I was a guest at someone's house. Green beans were a classic - I hated them as a kid. I have an adult friend who is even more fussy than your guest-to-be, but at least yours has told you in advance. Mine ended up with beans on toast and I haven't invited her back. I was starting to get really peed off when she didn't eat ANYTHING.

I'd go with the pesto pasta (but don't mention pesto - I've come across lots of kids and adults who 'don't like pesto', then say, 'MMMMMM that's really nice, what is it??), or tuna pasta bake. Making me hungry, now!

Having a fussy step daughter - my one dish that she will always eat is rice with broccoli. Cook the rice as usual and chuck broken up broccoli in 5 mins before the end. Drain and serve. Goes with pretty much anything.

How about Prawn Pilau. Gently fry some onion and korma curry paste, add rice, stock and bring to boil. Cover and cook slowly to cook the rice. Add cooked prawns, peas, peppers (whatever you like really) and some sliced chilli. Make sure it's all heated through. Top with some fresh coriander. Only takes about 20 mins and really, really delicious.
