When to plant seeds

When do I plant seeds that I have collected from my viola's so that I have a good selection of plants for next year.
How do you know when to plant any seeds that have been taken from other plants and no instructions as I usually buy plants or seed packets.

i just leave mine to self seed when they are ready, they come back every year, i figure nature knows best, i'm doing the same with the other flowers this year too, just leaving them to self seed...... though i will save some seed to plant in spring, so hopefully will get a nice long flowering season for them

all except the nasturtiums, cos they have taken over, so i'm gonna try to get some small ones for next year, or give the big red ones their own corner.
