Mmmmm Love it!!Unfortunately the only one in the house that does,so don't really have it often.
Although I'd normallt go for the quick touch of a pan method of cooking....picked up a nice recipe in Turkey....Brown in saucepan...add uncooked rice...then let the 2 simmer away together for 20 mins or so...yum!!the fates lead him who will;him who won't they drag.

When I was a child, we often had liver and kidneys but now I don't like them - texture too chewy, taste too yeeugh.
You can still eat thrifty - lamb shoulder is moneywise, lamb shanks even more so, shin beef etc. Not to mention adding lentils for goodness and making them go further.
I love Hugh FW and I admire the way he uses every bit of the animal but I'm happy to stick with the bits I like - as Lynda said, I didn't butcher it so I'll buy the bits I want.My hopes are not always realized but I always hope (Ovid)

Liver is easily spoiled by being overcooked. If it is chewy (apart from 'tubes') then it was cooked wrong. I go along with 'use as much of the animal as possible', but offering some to the dog is still 'making use' of it. One of these days I'll make brawn again. There is a fair amount of dogfood comes out of that as well, because I take out the skin-bits (including ears) before the brawn is finished (but you need it at the start to get the brawn to set). Kidney in 'steak-and-kidney' I tend not to notice. Served on its own, I'm not so keen......Flowers come in too many colours to see the world in black-and-white.

Decent pig liver is really good but it is rank if over cooked. Bought three massive bags of the stuff off an organic butcher near here for £3 a few months ago. Each bag had enough for us to have a meal with it dipped in seasoned flour and fried and then liver and bacon casserole for at least 4 afterwards. Must have had about 20 meals out of it which I though was an absolute bargain. Not keen on lambs liver though as I find it's a bit strong, even if you do the soak it in milk trick which is supposed to sort that.
Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.
