I'm doing some roast lamb for din dins tomorrow night and cannot remember if I have to cover the thawed meat or I can leave it uncovered?

meat needs a bit of ventilation (ie, don't cover it with clingfilm, foil or greaseproof is fine, as long as it isn't sealed, or just leave it uncovered since it is only overnight) but make sure it can't drip onto anything else that is in there.Flowers come in too many colours to see the world in black-and-white.

According to Hugh H-F, the outside of the meat drying out is a Good Thing as it helps to prevent the leaching of juices. If you go into a proper butchers, the meat isn't covered up in the fridge, they just lay a sheet of greaseproof type stuff over the whole lot at the end of the day.
