Brawn is basically boiled up and jellied pig's head.
I remember watching some being made on The Victorian Farm programme. My eldest daughter has refused to eat sausages since she heard that woman say something like "anyone who thinks they've never had a sausage with an eyeball in it, is wrong"

It is typically made of stale white bread, pork (traditionally the entrails), sage, salt and pepper, and sometimes onion. At least one butcher in Lincolnshire produces a gluten-free haslet.[3] In parts of the South the inner organs of a pig e.g., heart, kidney, liver,lungs, etc are called Haslet, or haslet hash.
Similar in taste therefore to a traditional faggot. Ready-cooked, may look like a giant faggot but sliced cold. Traditionaly served cold with pickles and salad. Ideal as a sandwich filling.

I used to like haslet in butties as a kid but not had in ages and have my suspicions I wouldn't enjoy it as much.
Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.
Which one are you and is it how you want to be?
