What about combining your favourite past-times - talking and drinking fine wines - and start a wine appreciation club on site? Are there any other connoisseurs around you?
Check out your local college/university for Summer Schools/Courses... our campus is running all sorts of stuff (including 'Learn Chinese', 'Watercolour Painting for Beginners')
Whatever you do please post up your progress. If you have 'something' at the end of the 103 days then your 'me' time would have been spent in a challenge to keep for history.

Now I've joined the army that fights the weeds.
Make a picture/scrapbook with an item for each day. The item could be a newspaper cutting, a picture you've drawn, a mini-poem, just SOMETHING for each and every day.
Or a picture, made by sticking things on a background, each 'thing' representing a day.
Flowers come in too many colours to see the world in black-and-white.
How about starting to learn a musical instrument if you don't already play one?
A new language is also a good one as has been suggested, some years ago my OH was made redundant and he found a teaching job in London, except from half terms and holidays we were apart for 6 years, I did an OU diploma in french over four of those years, it was enjoyable and time consuming and the excuse for holidays in France when he was home.
