  • cocoa courgette muffins: a disaster

    Only a disaster in that they were so delicious I ate half of them and now have to go out and buy more flour to make some more


    Cocoa Courgette Muffins

    Makes 11-12

    10 oz (280g) self raising flour
    Half teaspoon (2.5 ml) bicarbonate soda
    Half teaspoon (2.5 ml) salt
    2 teaspoons (10 ml) ground cinnamon (optional)
    3 Tablespoons (45 ml) unsweetened cocoa powder
    1 egg
    4 - 5 oz (110 - 140g) light brown soft sugar
    2 - 3 fl oz (60 - 90 ml) milk or water
    2 teaspoons (10 ml) vanilla essence (I used almond & they were fine)
    12 oz (340 g) courgette, skinned & finely grated, & water squeezed out a bit
    3 fl oz (90 ml) vegetable oil or 3 oz (85 g) butter, melted
    4 oz (100 g) walnuts/sultanas/Chocolate Chips (optional)

    Method
    1. Prepare muffin tins. Preheat oven to 375 - 400 F (190 - 200 C), Gas Mark 5-6.
    2. In a large bowl, sift together flour, bicarbonate of soda, salt, cinnamon and cocoa powder.
    3. In a medium sized bowl, beat egg with a fork. Add sugar, milk/water, vanilla, courgette and oil/melted butter. Stir well.
    4. Pour all of the wet mixture into dry. Stir just until combined, adding dried fruit during final strokes. Batter will be lumpy but no dry flour should be visible.
    5. Spoon into tins/paper cases. Bake for 20 - 25 minutes, until tops spring back when pressed gently

    (you can make it in a shallow tray tin - cook for about an hour?)

    I hope I get some courgettes so I can ask for the recipe

    Okay, so you added the recipe. Now all I need is for my wee courgette plants to perform a glut

      T-S, do you think I would I get away with using a loaf tin for this recipe?

      I still have half a flower bucket of courgettes in the kitchen to use up.

        Mmmmmmmmmmmmm think I might have a go at that a friend kindly brought me 2 large courgettes today without realising I've got plenty of my own at the lottie

          Yummy recipe, I made a choc/courgette cake last year, it was super. Will have to make the muffin one though, thanks TS for sharing

              I followed a very similar recipe to make a choc courgette cake and I made the mistake of using a standard 7-8" cake tin and it took an eternity to cook... or rather the centre did... the edges cooked through fairly quickly!!!

              I'd go for a shallower, larger, tin if you've got one to hand, Amanda!

                We have been making Carrot cakes all summer....and using Courgette instead of carrot.

                  Am I the only person who has never been able to achieve the courgette glut? Over the last three years I have grown about 10 courgette plants and have harvested approximately 8 four inch long courgettes! What am I doing wrong?

                      Killing them with kindness? Mine get neglected and have been great 2 years running.I feed them with the dregs of the tomato feed smetimes. And the pesky deer got to some of them last year.

                        I think they usually get washed or blown away. I have 4 courgette plants this year and I am eagerly awaiting flowers while everyone is on about glut already

                            I grew courgettes last year - they tasted ok but only produced five overall. It wasn't till the end of summer that I realised that they were butternut squash.

                            Will definitely try those muffins!

                            (just tried a courgette cocoa cake from a veggie box recipe - bit like a brownie crossed with a carrot cake, kinda flat and moist if anyone wants me to post the recipe)
