So, the chutney has been burnt twice this morning

I went out to pick up all the smashed seed trays (greenhouse over again in the wind) and when I came back the chutney had stuck to the pan (lowest heat).

I decanted it into another pan, simmered it again. It was faintly simmering for 45 mins, coming along lovely.

Stirred it.
Checked it.
Set it for another 30 mins.
Beeper just went off ... and the chutney is boiling like mad and has stuck to the pan again. I didn't change the heat

The (ceramic) electric hobs seem to have a demon in them. They will sit at low heat for ages, then have a power surge when you're off doing something else. It's really unpredictable and uncontrollable, and it's making me really cross.

Chutney has a critical point for burning. It's exactly when you leave it to do something else.

I bought OH a super duper new Lagostina pot to make his in to try and avoid this problem. It has a triple layered bottom and is really heavy. So far no burning problems, unlike his previous pan which regularly did what you have just described.

Oh dear TS, I was going to suggest one of those heat diffuser things, but I don't know if they work with ceramic, probably not, and burnt chutney tastes 'orrible doesn't it.

Ahem - t'is only me what makes chutney in our house!

I was forced to use three pans - to distribute the load, and both our Meyer pans had no problem with burning/sticking, but the cheapo (shiny stainless) one we bought from Dunelm I think, did burn on the bottom.

All three were cooked on gas though.

I have gas (as I'm often told) which seems to be much more reliable.
Not sure if pans make the difference or the hob???

We have a gas cooker and my nans old pan, its a big copper one, fantastic for well.....Chutney & Jams, never sticks.

I have been forced to eat a big dollop of said chutney, on cheesy toast (bread made with 5oz cheese in it, and 5oz cheese on TOP too)

You have my sympathies!Since moving to a house with a ceramic hob(& pathetically tiny oven!),I've gone from being a pretty good cook to not being able to heat a tin of beans without burning them!
I have found that if I start something off on a high heat & then want it to simmer,(sometimes)it helps if I switch to a different ring.(may be using a little more electric but if it saves the food getting burnt!)

Sympathies here, too. My old cooker, which came with the house, was a bloomin' nightmare to cook anything on. The oven door would open at random, the gas hob didn't heat evenly and the grill took years to warm up (despite being gas). I practically KISSED my new cooker when it was installed!

I did the 2nd batch on a left hand ring, and it worked just fine. No surging, no burning.
I think only the right hand rings have the demon in them.

I've read this title 4 times now and every time I read it as Cockerel not cooker - no wonder it didn't make any sense and you've not once mentioned a cockerel. Opps

That's freaky...the possessed ones of mine are on the right!!!

I have mentioned moving to Andi...several times,but he says we can't move just because I don't like the oven!(it's fitted into the worktops & we rent)
