  • What to do with Curdled Milk?

    I'm not exactly sure that this is in the right place... mods feel free to move

    A bit of a strange question for you... I know how you all like them

    Sometimes I don't get to use all my milk before it goes off. Now is there anything I can make with it that tastes nice! Don't know if will make a difference but it's semi-skimmed milk. Could I make cheese?

    Could you just freeze it in usable portions? In small pop bottles?

      I make paneer cheese if we have too much milk. Just boil the milk then the second it reaches the boil, turn off heat and stir though a spoonful or so of lemon juice.

      It'll separate then strain and press the remaining cheese. Chill then cut into pieces, fry each side and pop in a curry. Or just eat it with a nice glass of wine...

        I saw a program on uktv food forget which one where he made a paneer cheese from milk, think it's a mild Indian cheese

          There is an amazing Indian restaurant just across the road from us* and they serve a superb paneer dish that OH loves... I had no idea how to make paneer cheese... this is now my mission for the weekend!


          * If anyone is in or near Colchester and likes Indian food then PM me for details. This restaurant is nothing like any other, run of the mill, Indian I've ever been too. The don't have a huge vat of 'curry sauce' on the go and then just add slightly different ingredients to it make the different curries. Everything is made from scratch and it's amazing! PS - I'm not affiliated with 'em in any way... just love 'em!

            Excellent suggestions thank you

            The only thing about freezing milk is if I forget that I've got some in the freezer! I am that forgetful!

            That cheese sounds lovely, yum!

              Why not buy the small plastics bottle and freeze it until you need it. Mum does this, although sometimes you get icicles in your tea

                my gran always used to strain through a muslin cloth and chop up chives and make cottage cheese and chive....
                Never test the depth of the water with both feet

                      Ours used to be frozen in winter and yuk tasting in summer, put me off milk forever.

                        I've used it in scones and soda bread instead of yoghurt. Works a treat.

                          Our school milk used to be in cartons, I think it would've been semi-skimmed but it's probably UHT these days.

                          I like the idea of scones and cottage cheese too. I'd just been pouring it down the sink but now I can stop that

                            ...p.s. anyone making paneer, just make sure you wring as much liquid out after straining as you can (it should feel quite dry); and try to weight it on top in fridge to press down (I use a heavy jar on top of a plastic lid). I find one pint makes enough for 2 people as a generous side dish. Or snack with
                            drinks...

                              I started school in 1960 so milk only came in bottles I remember in winter we used to put it on the radiator to try thaw it out a bit.
