Am I right in assuming that acidic liquids accelerate the composting process?.......I was thinking the likes of say vinegar as it is so cheap to buy.

I think it is the nitrogen content that helps. Composting is the work of certain bacteria, and the nitrogen compounds are their food. (over-simplification, but close enough)
