My first ever cake was a disaster. I decided to bake a cake for the village show where we lived when I was wee, a Victoria sandwich. Unfortunately I ate so much of the mixture by the time it came out it was a Victoria pancake. Didnt win anything.
I made a cake for an 18th birthday party last year, and would have to say I was quite impressed, even more so when I saw it ALL disappear at said party.
I am now very intrigued by DDL's mysterious disappearance, just how overripe were those banana's?

I haven't had any but Mr DDL had some last night - he said "where did you buy the cake from?" !!!
I'm so chuffed! Have lots of carrots that need to be used up - so may try carrot cake next.

I have my grandmother's mixing bowl! Actually, I have two of hers - one is a Mason Cash and one is too old for that - it is a giant salt glazed pancheon. Used for large mixes!
I don't make too many cakes though (not worth it just for me).
That sounds great Bernie - now all we need to know is does it stand up to the taste test!
I think that's lovely. I'd love to have something of my grans but sadly don't, just happy memories.

I really, really hope you didn't use eggs straight from the hen! My MIL couldn't understand why my cakes were bigger and fluffier than hers. Eggs need to be laid for at least 3 days before cooking or they don't rise properly.
Nothing more delicious than a freshly laid egg, they just aren't any good for cakes as the whites don't hold air.
Apologies for the disappearance - the Vine wouldnt let me log in last night, well it did in the end, then cut me off and disappeared altogether!

Banana Cake
3 ripe bananas
1 teasp lemon juice
100g butter
100g caster sugar
2 beaten eggs
225g SR flour
Mash bananas and lemon juice. Cream butter and sugar, add eggs and bananas. Sift flour and mix well together. Pour into a greased tin and cook for 40 - 45 mins @ 200c.

I think it should have risen a bit more but then I'm not sure if the tin was too big. Anyway, it tastes delish and has been given the thumbs up by Mr DDL.
Well done you! It's a good way of using over ripe bananas. I use a recipe that measures by the cup-nice and simple.
Thanks for the tip about fresh eggs,JanieB, I didn't know that, I'd would have thought the fresher the better,. You live and learn.
