Trouble is, when you're making a sponge, if you do it too soon the cake isn't as nice to eat. So it's called fine balancing the timing, not 'last minute'

Anyway, it looks grand as it is, and I bet it tastes lovely

That's the problem Sarz....but I think p'raps another time I could have it baked ready to ice by lunchtime...instead of starting the decorating at about 11:00
Have you ever tried cutting icing to shape and then sticking it on once hardened...I'm thinking that's the way to go in future.

The river Trent is lovely, I know because I have walked on it for 18 years.

                Cracking cake!

In other news... GET A HAIRCUT! (to Ash).

I had hair a wee bit longer than that until a couple of years ago and to be quite honest, I loved it. I never understood why, but sometimes it went like a lion's mane and looked ace! I only had it cut because my head was getting too hot in a very hot summer and I was sick of it going in my eyes and mouth when the wind was behind me.
                Long hair rocks!

If I didn't need my clients to feel confident about me (and I resent that hair comes into it) I'd grow it out again.

As for icing cakes - did you ever see the cake making program on one of the many digital channels? It might be called King of Cakes or some such. I never really watched it but I'm sure they had some clever way of icing some of the really quite intricate (and definitely vertical) cakes they made.

                    Good lad!
I want my hair back. It really annoyed me sometimes but when it was well behaved I thought I looked far better with long hair than I do with shorter hair (I'm still in "get a haircut" territory for most people but it's short to me).

Andi&Di your cake looked fanstic!!! Cake i have one?? Glad Ash like it were all lovin the new doctor here although i still miss DT

Fresh sponge is always awful to ice and get a good shape but you can cheat. Bake it the day of two days before. Consider making a genose sponge its firmer so won't be as light and fluffy as a victoria sponge but still tastes great. You can freeze or at least chill the cake before you put buttercream on the then chill again. Also if you put a layer of marzipan on before the icing this can hide multiple sins and mazipan tastes lovely too. We jam and cream, then buttercream and marzipan and chill you can wrap a ribbon tightly round the cake to hold it all it. Then when chilled but not frozen ice cake.

Oragnic the cake making prog is Ace of Cakes. he has a web site and his designs are out of this world.

                        Cheers Small frog.
I use a genose recipe for decorated cakes already but had never thought of freezing them before decorating...I'm thinking that's a good way to go.Thanks(and I should really consider the marzipan too...just need to be a bit more organised)

                          That's the one, smallfrog.
Di - you should try to see if you can watch some of that show - you might find some inspiration.

On the marzipan front though, just remember some people can't stand the stuff. I don't mind it but I know some people who'd rather go without cake than eat the stuff.
