          To make the flatbreads, i generally go by 2 parts flour to 1 part water. I also add warm milk or yogurt as part of the 'liquid' element, depending on how rich and sweet you want it. mix, and knead for a few mins until the dough is smooth. then divide into bits and roll into discs.

          for the middle bit, theres loads of variations but this is my fave:

          Pistachio nuts
          Dessicated Coconut
          Chopped Almond
          Raisins
          and some yogurt or milk

          crush/chop/grind nuts and fruit to your own consistency, then moisten the flatbread with milk/yog in the middle where the mix will go, then fold over.

          To make a naan, add 3.5g instant yeast and 1/4 teaspoon per 2 cups (around 250g) of flour. follow the same process but leave for 2 hours to rise. I find a stroke of melted butter/milk on the top makes them go nice and brown on the top, and when i make naan i bake them for a few mins like a shop bought one, and if i make flatbread i fry them (in pretty much no oil though)

          i think this makes sense - and if it doesnt then ask away. Next time I make them I'll do measurements and some piccies, once youve made them a few times you start to move away from the recipe

          yum yum, i want some now!

          and of course you can fill them with anything - mashed bombay potatos, drier curry dishes, samosa filling, herbs, anything. and the flatbreads are quick, cheap nd easy

            And I had some pasta and salad tonight, with homemade tomato pasta sauce, yum yum. Might go for seconds as its mighty cold tonight
