Bearders I appreciate the research. Unfortunately I just tried it and it converts it to a .RTF which still doesnt let me edit it, not even select all text and save to a Word doc.
If it was the bit on the side of the page, "download for free" I cant as I dont have admin rights on my comp and our 1 IT bloke here is on leave for a week. Winner

if it lets you convert to an rtf, find the file, right click and 'open with' notepad. If it's not in the list of things to open with, right click, 'open with' scroll down to 'choose program' a list will pop up, choose notepad.
Doesnt give me an "open with" option at all. Gives me loads of options, not one of them "open with."

The issue with altering a .PDF document to a .doc (or 'Word') document is the coding used to ensure the thing you're trying to do can't be done. They are, as the anagram suggests, Personal Document Files. I.e., they're not mean't to be copied and are distributed in a form to ensure they are not.
I would be highly surprised if you found a quick-and-easy-way to do this from a simple Google Search (but if this does work, more power to Google).
Generally speaking - you're not entirely mean't do de-crypt a .PDF file so you can manipulate it in word, hence the encryption in the first place. I can however, change a .PDF to a .doc or word file. I'm just clever like that
So e-mail me the file and I'll e-mail it you back with the word version, fully editable without administration rights on your PC. (I sort of feel like saying - "OR YOUR MONEY BACK!!")
You're absolutely right of course Chris. I had to try and explain that to my very clever Professor who kept sending me draft reports back in that form. Took me ages to explain to him that I couldn't alter them! I thought that Taff's theory would work, but it doesn't look like it. Clever boy.
