Making the cupcakes this afternoon. I've decided to use a Madeira cake recipe with added lime zest and, when they are baked, I shall use the melon baller to scoop out a hollow in each one and fill it with lime curd (making that this afternoon too) and add a little lime juice to the white buttercream too. I'm trying not to make sickly sweet cakes as they are mostly for grown ups.
