I've just cut open a smallish squash to remove the seeds and they've sprouted inside the squash! Is it still alright to eat? Stupid question, probably, but I'm not a squash expert!

As long as the flesh is not rotting, it doesn't matter a blind bit what the seeds are doing, you're not eating them !
For further reassurance, I once ate an apple which had a sprouting seed in the core and suffered no ill effects. (Sadly the seedling perished, as advice on the Vine indicated is likely in such cases.)There's no point reading history if you don't use the lessons it teaches.
