My father kept about a dozen hives at peak.
He was semi-immune to the stings, had a hole in his shirt once when removing supers and mum had to spend about an hour scraping the stings off him.
When I get stung I swell quite badly.
HONEY is the ONLY food in the World that doesn't have a sell by or best before date. It never goes off.

Two years ago, we had one that somehow fermented, foamed out of the jar, throught the screwed down lid and went through the panel joints of the cupboard to be found oozing down the wall.
However, that is one jar in forty years.
Reckon the bees had not concentrated it enough. Can't think of any other cause.
It's always been my ambition to have bee hives, since I was a seedling, just love to do that. I've been talking to a guy locally but previously an apiarist from Dorset about him and I having a couple of hives each and was all scheduled for this year but he's just had a bit of a prostate problem so likely to be next year now.
Thinking about it, could talk to my chums that I'm gardening for about having the hives there, their estate is so big would be great to have them in the walnut orchards or in their big wildflower meadow.
i read that Manuka has more powerful anti-bacterial properties than Tea Tree in Australia. I think that is what makes it different from any other honey. The Manuka Oil is used for athletes foot and various other skin complaints. Just wished it would help more for my hayfever, i am allergic to grass-seed and it has been hell yesterday!! havent started local honey yet, but apparantly gotto start that 2-3 months in advance, so next year Jan, i shall have honey in my tea everyday...
Honey, I believe will ferment in the jar if it was taken from the hive to soon. The water content has to be correct.
