Job for a sparky, boiler should have a separate perminate live as well as a switched live. The switched live controls the main gas valve, whilst the perminate live is there to supply the pump over run.

The overheat trip is there to protect the low water content heat exchanger, I would get it sorted before things get worse and you end up with a new heat exchanger or worse boiler.
