I hate waste.........got some batches out the freezer yesterday and when they defrosted they felt hard ..too many to give the birdies so I've now got a big tub of breadcrumbs for my stuffing .S*d the housework I have a lottie to dig

The remaining cockerel will be salad lunch next day and soup with veg and pearl barley by tea time. Any carcass left becomes stock. Then the remnants of that become bones for foxy, strictly down the lane end. Any leftover veg becomes left over veg soup - always amuses people, especially my mum. We had some ham tonight, we will have more tomorrow, then it becomes ham and split pea soup when nobody wants any more of it. Other than that all other meat is frozen, so picked out as required. You can always make a good soup or stew out of your main meal leftovers. Catching up with the thread still.. same VVG. I am refusing to have turkey become the staple meat for xmas in our household.
a) There's always too much
b) I'm sick of turkey
c) I like to have smaller, but better quality cuts of meat when we do eat meat.
So anyway, goose used to be the traditional british meat, afaik - I'm doing a regular roast, which basically is: roasted veggies (spuds (along with small-salted jacket style too), celeriac, beetroot, carrot, p'nips, leeks, onion and whatever else I find that takes my fancy when shopping), a meat and a green veg (peas, beans, kale etc).
I don't eat obsessively anymore (used to really pig out) and prefer to leave the table not feeling bloated
Anyway, with year we're having a crown of duck (properly, free range of course!) Goose is lovely, but after forking out for a new kitchen and other things, I didn't want to goto town spending a lot of money when it'll be myself and 1 other main meat eater (kids will eat some, but they don't eat that much as they're still little). But yep, in the future, it'll be goose - regardless of who comes and moans that it's not turkey
I tend to do a veggie option too, not sure what I'm going to do still this year - VC linked a good site in another thread - think I might experiment though!

... and on the waste subject - a while ago, my wife tried something out, which was for a month (I think it was a month anyway, might have been a couple of weeks), we saved any left overs from meals and frozen them. Then they were all defrosted at the end of the period, and made into soup.
It tasted foul, but I put up with it, as it was a free meal which would have otherwise been thrown away! Anyway, soup with a decent batch of bed goes down well in my book, even if it does taste of nothing

Onion as your basis Chris, left over veg, seasoning and good homemade stock. I always ensure celery in my mix soup as it gives a great flavour. Blitz once simmered. Never had a bad one yet. I do insist upon a good butter to soften the onion in and tend to use a Jersey butter or French unsalted. I use Fleur de sel, expensive but taste is so much better and you need less of it, plus a grind of pink and lemon peppercorns. A swirl of cream at the end.
