  • My challenge for week 5 was to create a book from the Prestwick Burgh Records, covering the period from 1470 through till the late 1700s. The original book, of which there were only a limited number of copies, was published by the Maitland Society in 1834 and is now long out of copyright. I had downloaded a copy from the internet some time ago which had lain dormant on my computer till now.

These records are important to me because my ancestors were among the 36 Freemen of Prestwick, an honour, (according to local tradition), granted by Robert the Bruce for services rendered during the Wars of Independence. Unfortunately, the Freedom rights and the small acres that came along with them passed out of my side of the family when my 4xggfather died in 1811 as my 3xggfather was the second son.

The method I used involving a comb binder utilizes round plastic spines with 21 rings (for A4 size) and a hole puncher that makes rectangular holes. Challenge completed - see pics.

    • Very smart and well done. Those comb binders do a great job but can be a bit fiddly until you get the hang of them - I remember having to make "books" like this when I was working.
Looks like you've made an excellent record of your family history though. Going back to 1470 - amazing!

      • Okay. My cream is cheesing. I hope.

Have heated up the cream and milk mixture to 21c. Added the buttermilk, stirred well and added the essence of rennet at 1 tsp per pint. Covered the pan (anti-cat covering) and will now leave it overnight as per the instructions.

Fingers crossed I'll have a pan full of curds and whey tomorrow. I wonder if I can make ricotta from the whey........

Thanks - there is a gap in the Burgh records from 1600-1726 so while I have the Freemen's line back to 1682 the gap makes it impossible to be 100% certain that the line continues beyond that point.

The Freedoms were normally passed down from father to eldest son who was always named in honour of the grandfather, although they could also be passed via the female line if there was no male heir available and then passed to the females eldest son - I found this on a few occasions for other surnames.

The earliest family surname I found was 1470 with the earliest combined same forename and surname was a teacher in the early 1500s but without the record saying the record had been claimed by the son, following the father's death, it is not possible to connect the two.

How much whey have you got? I think it takes about a gallon of whey to make half a pound of ricotta.

                • Half my week 5 double challenge (to half catch up as I'm 2 behind) is completed, seeds on their way to VC's VSP as I type, and half of the other half (is it OK to have half of half a challenge, I wonder?) is complete as I now know I don't need planning permission for my dropped kerb, so am just waiting on a man with a clipboard to come and measure me up and calculate the cost. With my council though, I won't be holding my breath, so this bit of the challenge will be ongoing for a while, I think.

But it's nearly next week already...What to do for a double challenge next week......?

                              • Week 5: Cream Cheese.

                                |I potted up the cream cheese today, after leaving it t drain for two days - one day longer than stated in the recipe I used. I got four Bon Maman jam jars full, and another 300g to make a lemon cheesecake with - I wanted to do that today but other things got in the way.

Tomorrow, I want to try Ricotta from the whey collected draining the cream cheese. I can freeze the ricotta but I can't freeze the cream cheese. Will put a photo up when I get a chance.
