Why yes, what a good point, they do perk up with a bit of vinegar.

So if I grind peppercorns around the beans and lumps of butter, will that save my doing so after steaming?

I've got a dairy about 2 miles down the road that sell their milk and butter in the village shop, its a little more expensive but it is lovely.
