Eggs?

    Our kitchen is like an oven because OH has the drier going all the time! Buter melts on the bench tops so eggs are kept outdoors to be brought in as required.

      I'm going to be doing my kitchen work tomorrow, I'll ask the chef, if I remember. Think maybe people keep them in the fridge for safety reasons, rather than preserving them. In the 'olden' days would have been in a cool larder/pantry.

        Maybe they are for storing boiled eggs!

          Always keep eggs on my eggskelter on the worktop. Never in the fridge.

              My fridge came with egg holders but I still keep them in their box.

                    I asked the chef about the 'eggs', they keep them in the bottom of the fridge, the warmest part, this keeps them at a constant temperature, as the temperature in a kitchen fluctuates and this is not good for eggs, they should however be brought out to return to room temperature when you are going to use them.

                    This us the kitchen of Children's Hospice, so exceptionally high standards if hygiene and food storage.

                    In the past they would have been kept in cool larder, but it seems the best thing is to keep them at a constant temperature.

                    She also said that the eggs are already a couple of weeks old when we buy them, unless
                    Iike some of you lucky people, your chickens laid them earlier in the day!

                        Mine are never in the fridge either - not sure if there is a right or a wrong way but I always keep them cool, with the pointed side down. I've often hatched some that I've stored like this for a week so they stay fresh for a while!!

                            I don't know Verinda, I never really noticed that eggs had pointy ends! Maybe something to do with the yolk?

                            I'll go and have a look at my eggs!

                              It's something to do with the air sac at the rounded end. But I can't remember!

                                Oh yes, is that the part that absorbs the air, so you can check how fresh your egg is,when you float it in water, but remember if it's fresher when it floats or sinks?
