Our kitchen is like an oven because OH has the drier going all the time! Buter melts on the bench tops so eggs are kept outdoors to be brought in as required.

I asked the chef about the 'eggs', they keep them in the bottom of the fridge, the warmest part, this keeps them at a constant temperature, as the temperature in a kitchen fluctuates and this is not good for eggs, they should however be brought out to return to room temperature when you are going to use them.
This us the kitchen of Children's Hospice, so exceptionally high standards if hygiene and food storage.
In the past they would have been kept in cool larder, but it seems the best thing is to keep them at a constant temperature.
She also said that the eggs are already a couple of weeks old when we buy them, unless
Iike some of you lucky people, your chickens laid them earlier in the day!DottyR

Mine are never in the fridge either - not sure if there is a right or a wrong way but I always keep them cool, with the pointed side down. I've often hatched some that I've stored like this for a week so they stay fresh for a while!!
