    Its fresh when it rests on the bottom of the bowl. As the egg becomes staler, one end will lift up and eventually they float completely - when its too old

      Oh, goodness I'm learning a lot about eggs here! Thank you. I must go and have a look at my eggs, see which is the pointy end!

          When we produced eggs commercialy we had many thousands a day, all were kept on egg flats stacked about 3ft high on tables. Those we didnt sell on the farm or use for hatching were stored like this and collected by the egg grading station weekly. So some of them were a week old when they left the farm. maybe 3 days in the egg grading station and perhaps a week in a shop. So not so fresh as you might think when purchased. Apart from any natural coating an egg has it also has an interior sack which is a disease barrier. If an egg is cracked I would use it straight away or put that in the fridge but no need to refridgerate normal eggs.

                        Goodness me no! its the egg that would be pointless if you scramble it. i cant imagine anything much more healthy than an egg.

                            Dorothy, i dont buy into this low fat idea, they are begining to realise that fat is not the killer it was once supposed to be. For years I ate low fat and took statins, my cholesterol was sky high! I dumped the statins and started eating low carb but unrestricted fat, cholesterol level is now 4.
                            The Amish people in America have an unusualy low heart attack rate, a 30 year study shows they live on a very high dairy diet, butter, cream and bacon ham etc. Children who leave the community return to the sky high heart attack rate of average Americans! The research concluded that stress is more likely to be the cause.

                              It's predominantly "good fat", the yolk is full of vitamins etc too.

                              The albumen is packed full of protein (for its weight).

                              I went through a phase of eating half a dozen eggs as a snack a day when I wanted to increase my weight (as part of a training programme). Brilliant foodstuff- so versatile.

                                My brother in law was telling me that people used to keep eggs on egg wheels and turn the wheel a little every day, something to do with moving the oxygen in the egg. And the eggs kept fresh for ages.

                                I thought that was quite interesting so thought I'd report it here on this eggy thread!
