    Looking for a large jar to use for Quarante Quatre I came across the perfect vessel at the back of my cupboard... the label told me it contained pickled cucumbers.

    Looking at the sediment I could see it also contained raw garlic, now proscribed due to botulism.

    The date on the label was 2010... that was the year of my biggest glut...

    We decided 2010 was before the botulism scare with raw garlic in preserves was known so decided to eat them anyway...

    They are marvelous!

    They are so tasty!


    If I don't post tomorrow let those be my last words!



    Edit: to prevent confusion; as pointed out in later posts we were never in any real danger as pickling raw garlic does not raise a risk of botulism, only preserving in oil.

                    Phew... we both woke up safe and sound!

                    Now about the chilli oil I still have left...

                          Yes, you are quite correct. Have checked a few other sources and raw garlic (or other ingredients) is fine if kept in high salt, high acid liquid. It is only in low salt, low acid liquids such as oil that cause a worry!


                          I used to make garlic oil until a couple of years ago but ditched a lot of bottles after becoming aware of the danger. As another thread mentioned, I really ought to dump my chilli oils as well.

                            Get yourself a decent preserving recipe book!
                            I make plenty of chilli oil for Christmas presents...never killed anyone yet!

                            It might we worth adding a note to your first post though to stop people getting confused.......
