I bought two boxes of apples Braeburn and Bramleys after peeling and slicing I have been putting them in lemon water to help preserve them before they are dehydrated is citric acid better for preserving and if so where do I buy it or how do you do yours?

I dip mine in water with lemon juice and haven't had an issue with it yet. I suppose it depends on how long you want to store them. Mine never last more than a few weeks if OH sees they are around.
Edit to add: We're still eating strawberry slices dehydrated last June/July and they have lasted incredibly well. thanks lemons seem safe to use , my apple slices dont last long either, and strawberries are on the list as I only just got into dehydrating from being on here, feel free if you want to send me a sample!

I never bother with lemon juice, I just slice them and dehydrate straight away. They come out brownish (sort of eggshell colour) but they taste great and last well in an airtight container.A garden is a lovesome thing, God wot! (Thomas Edward Brown)

I usually go the lemon juice route using one of those lemon shaped squeezie bottles.
The slices don't last long once the family find them, same with the tomatoes, strawberries and courgettes.
