  • Preserving beetroot

    Morning all,
    I'm not sure if I'm in the right place for this question but here goes anyway!
    I have a large amount of beetroot I'd like to preserve but I'm not fond of pickled beet's, does anyone know if I can preserve them in oil? I have frozen some but I'd like to have them on hand any time I fancy them so thought oil would be good but I need some advice from people in the 'know'. Thanks in advance.

    Morning Jilly, I know nowt about preserving but thought I would welcome you to the vine. Someone will be along with an answer for you..................I'm 100% sure.

      Hello and welcome to the vine Jilly

      I've not tried beetroot in oil but I've made a few jars of beetroot and apple chutney and tasted good. There's a couple of recipes here on this thread if you're interested:-

        Made some great sweet onion and beetroot chutney myself! Definitely going to check out those that you suggested though. Still wondering about beetroot in oil though

          I have never tried it but have heard of people doing this very successfully

          I grow 70% for us and 30% for the snails, then the neighbours eats them

            I'm sure you could preserve them in oil but it would be best to use them up quite quickly, for the same reason that storing the likes of chillies in oil is now discouraged: the botulism risk. While there's water content inside a preserved veg, there's a chance of bacteria multiplying. Vinegar vastly reduces the chances, to the extent that pickling is considered safe, but oil doesn't. There are arguments for and against the oil/veg/botulism thing and it's your choice, but it's worth being aware of.

              Could you slice and dry them? V.low oven for a couple of hours until they're snappable? (guess what I'm going to try!)
