  • In the mag?

    Not sure where to ask this but,
    In this months mag the cover mentions 'Jam busters'
    I could not find it...? is it me- it must be???
    What was the 'Jam busters' bit about?

    I couldn't find it either. Jam making - no sign inside.

      I think the tag line refers to page 86. Greengage tart and so on and page 88 Spiced Plum sauce. There is also a bit on preserving plums.
      The weeks and the years are fine. It's the days I can't cope with!

        I looked and looked, yes there was a bit on fruit, but Jam not mentioned really... unless I'm being thick

          There is a quick reference to plum jam in the red box at the bottom right of page 88 - but I agree after the tag line on the cover there should have been a much better article on the subject!
          The weeks and the years are fine. It's the days I can't cope with!

            That got me wondering too- Rhubarb, cherry, red/blackcurrent, gooseberry, raspberry- any of those would have been very helpful this month- perhaps we should ask for next year??
            What would you want for next month?? ( not stealing the thread or anything!!!)

              Apples, courgettes, tomatoes - an apple and tomato chutney would be good.

              Red/black currants, jams jellys - a savoury recipe with these could be interesing.

              Picalilly? (sp?)

              Preserves for Christmas?

                I was very annoyed to find one measely plum recipe, not good at all.

                I would like to hear really unusual recipes for jams and chutneys. Odd combinations that really work!

                  Last month I was completely bemused by the picture of Hugh F-H on the cover, but couldn't find him in the mag. A couple of months before that there was a big swede picture on the cover, but no swede article, it then seemed to turn up the month after... Thought it was just me going a bit doo-lally

                  Next month I'd like to see some mention of how to cope with all this rain, instead of how to cope with drought!! (I know, I know, the mag is produced months in advance...)

                    cottage garden, here are a couple of unusual jam recipes from the Sunday Telegraph 'colour bit' from September 2004, by Diana Henry:-

                    PLUM, ORANGE AND CARDAMOM JAM

                    2 oranges
                    1kg (2lb 4oz) sugar
                    1.2kg/2ln 12 oz plums
                    the juice of 1½ limes and ½ orange
                    1½ tsp freshly ground cardamom

                    Slice the oranges into very thin rounds, then quarter each round. Put these into a preserving pan with 200g (7oz) sugar and 150ml (5fl oz) water. Bring the mixture to the boil, stirring gently to dissolve the sugar, then cook the orange pieces until they are translucent.

                    Meanwhile, halve and stone the plums and cut the flesh into slices. Add these to the oranges, along with the


                    NECTARINE AND BLACKBERRY JAM

                    1.5kg/3lb 5oz nectarines
                    1.5kg/3lb 5oz blackberries
                    juice of 1½ lemons
                    1.5kg/3lb 5oz sugar

                    Halve and stone the nectarines and cut the flesh into chunks. Pick over the blackberries, removing any stalks of leaves. Put the fruit in a preserving pan with the juice of a lemon and 300ml (10fl oz) water. Bring to the boil, then turn down to a simmer, and let the fruit cook for about 20 minutes, or until tender.

                    Add the sugar. Stir to help it dissolve, then bring to the boil and cook until the setting point is reached, skimming off any scum. Add the juice of the half lemon, stir, put in sterilised jars and seal.

                    Have tried them both, and can recommend them.

                      PS, Oh dear, have I made a mess of the Plum, Orange and Cardamom Jam. I tried to edit it, but it didn't work.

                      From "Add these to the oranges along with the" add - rest of the sugar, the lime and orange juice and the cardamom. Bring to the boil again and skim any scum which rises to the surface. Keep on a high heat until a set is reached. Put in warm sterilised jars and seal.
