Yep, there's lots of variants of the plant theme you could do here.

I don't know if I could have a garden just one colour, though I can see the appeal of an all white garden. Personally, I'd always choose cool colours (blues, purples, whites) over hot ones (reds, oranges, yellows), and then try to create a look featuring all cool colours.
Possibly if you don't know much about plants but know the look you'd like to create, then having all the plants of each colour grouped together means you straight away have access to lots of choices, and then you just need to choose specimens that suit your site and soil. Good idea
