I thought it was quite entertaining. But he's not talking about composting, which is an aerobic, mostly bacterial process. He's talking about making leafmold, which is an anaerobic, mostly fungal decomposition. He says don't add kitchen waste and stuff to your leaves, I would say don't add leaves to your compost.
Keep the leaves separate and make good use of them.

What I found interesting about the video is his reasoning that supports that all that is needed for a good, high nutrient compost is tree leaves that are chopped and composted. Coffee grounds can be added but that's optional.
It makes good sense to me but what do I know?
