Winter cabbage delight recipe...
How about finely chopping up a small amount of cooked red and green cabbage,onions (red preferably) mixing them with the spud flesh , adding herbs and spices to taste ( espesh chillies) make a type of potato cakes (bubble and squeak) covered with brown breadcrumbs and serve with cheese sauce and cranberry jelly?
The red cabbage and onions and cranberry jelly might distract from the colour of the spuds?
Meat eaters might like them with some nice chunky bangers...
